YELLOWTAIL SUNSET UNVEILS MENU
Fresh sushi, Japanese staples and ingenious drinks highlight menu
(WEST HOLLYWOOD, CA) –Hailing from the opulent Bellagio Hotel on the Las Vegas strip, the renowned Yellowtail restaurant will open this fall on West Hollywood’s Sunset Strip. Featuring Japanese cuisine, the menu will be complimented by a beverage program which highlights creative cocktails, as well as an expansive wine and sake list.
From the mind and creativity of celebrity Chef Akira Back, Yellowtail Sunset will feature Japanese staples, but will focus on visionary items. Menu items will include Lobster Carpaccio, Duck Prosciutto and Back’s inventive Jeju Domi, consisting of line caught red snapper from the Island of Jeju, topped with Kochujang sauce.
Following the success of the Las Vegas flagship, Back and The Light Group have joined forces with Los Angeles based LORE Group (Rock & Reilly’s/Pearl’s) to take over 8768 W Sunset Blvd – formerly Mirabelle restaurant – to bring the finest modern Japanese cuisine to the famed Sunset Strip in West Hollywood, Calif.
In pairing complex flavors of the aromatic cuisine, a wine and sake program will feature bottle and “by the glass” options, but the true highlight of Yellowtail Sunset will be the cocktail menu that fuses liquor with the seasonal ingredients, creating drinks that are unique, like the Cherry Blossom, extravagant, in the case of the L.A. Lychee, or fanciful, like the Sunset Strip. Envisioned as a heightened sensory cocktail menu, the drinks have been created by The Light Group’s renowned mixologist, Michael Monrreal.
Yellowtail Sunset will be another remarkable feat from the highly acclaimed Chef Back, whose Yellowtail Restaurant & Lounge restaurant on the famed and competitive Las Vegas Strip has been a magnet for West Hollywood – clientele includes Eva Longoria, Justin Timberlake, Fergie, Pink, Steven Tyler and many others. Taylor Swift, another regular, once said, “Yellowtail is the best. I go there every time I’m in Vegas.”
